Ingredients

    2 tbsp Olive Oil
    2 cup, strips Green Peppers (bell peppers)
    0.5 tsp Diamond Crystal - Kosher Salt (by SHIRTTALES)

Tips

This is a classic Italian side dish or lunch (serve with crusty bread). These peppers are meant to be browned and almost caramelized. They shouldn't be soft/sauteed like in a sausage and peppers dish.


Directions

Cut bell peppers (or any mild pepper variety) into half-inch thick strips. Blot dry. Microwave 3-5 minutes until almost soft. Drain liquid.

Heat oil in heavy saute pan (not non-stick) until hot but not smoking. Add peppers carefully; keep a splash guard or lid nearby. Use lid only as a last resort and only temporarily until sizzling subsides. You don't want to put a lid on it or the peppers won't brown; they'll just get mushy.

Turn the heat to medium-high. Salt peppers to taste. Cook a few minutes until lightly browned, flipping a time or two with a spatula.
