Ingredients

1 1tsp Olive Oil
8 serving Onions, yellow, raw 1 oz.
1 large (7-1/4" to 8-1/2" long) Carrots, raw
2 stalk, large (11"-12" long) Celery, raw
1 cup Bell peppers (Green, Red, Yellow, Orange)
4 clove Garlic
2 cup Snow Peas, fresh
2.5 cup Canned Tomatoes
4 cup Swanson Vegetable Stock Certified Organic (by LAOKEEFE)
1.5 tsp Oregano, ground
1 tbsp Basil
.5 tsp Thyme, ground
1 tsp Salt
.5 tsp Pepper, black
4 cup, chopped Kale
Directions
Heat a large pot over medium-high heat and add olive oil.
Throw in onions, carrot, celery and cook 3-5 minutes or until onions are translucent.
Add garlic and bell pepper and cook for 1 minute.
A snow peas and cook for 1 minute.
Add tomatoes, vegetable stock and spices, stir.
Bring to a boil then reduce heat to a simmer. Cover and simmer 25 minutes.
Add kale and cook for 5 minutes.
Serve topped with fresh parsley.
