Ingredients

    0.25 cup, chopped Onions, raw
    2 cup Spinach, fresh
    0.50 tbsp Balsamic Vinegar
    0.50 tbsp mint leave
    3 oz Tomato, grape (3oz = appro 12 tomatoes)
    2 serving Trader Joes Albacore Solid White Tuna (in water), 2 servings per can
    1 serving Zuchhini, 1 cup serving
    1 serving Avacado (1/2)
    1 serving Mezzetta Pitted Greek Kalamata Olives (4 olives in a serving)
    1 tsp Extra virgin olive oil 1 tsp (by FRANCINEHUYBEN)

Tips

mint leaves really do add to overall taste, so please don't scrimp. Add more if you like, which I think you will!


Directions

chop zucchini and either grill or saute on high in nonstick pan lightly sprayed with oil. chop all other vegetables, keep raw. toss together in bowl with tuna, drizzle with olive oil and balsamic vinegar. salt and pepper to taste. Serve right away.
