Ingredients

    4 tsp Ginger Root
    .5 cup, diced Celery, raw
    .25 tsp Pepper, red or cayenne
    2 cup Wallaby Organic Plain Lowfat Greek Yogurt
    16 oz Tyson boneless, skinless chicken breast
    1 tbsp Almonds - sliced
    1 serving dried apricot (5 pieces)

Directions

In a blender or food processor, combine giner, celery, chili pepper and yogurt. Pulse or beat on low to a smooth consistency. Reserve half a cup of the processed mixture and marinate the chicken in the remaining sauce. Refrigerate for 24 hours.

Preheat oven to 350. Take the chicken and discard excess marinade. Over high heat in a non-stick pan, sear the chicken pieces for 2 minutes on each side. Transfer to a baking sheet and place in the preheated oven; bake for 20 minutes to finish cooking.

Arrange cooked chicken onto plates and spoon remaining marinade over top. Sprinkle with almonds and apricots.
