Ingredients

    24 oz Smart Chicken- organic boneless chicken breast (by LRSPENCE)
    2 clove Garlic
    2 cup Earthbound Farm Organic baby carrots (Kroger/Dillons)
    6 serving PC organic celery heart 1 stalk serving (by A_LITTLE_TLC)
    4 medium (2-1/4" to 3-1/4" dia.) Potato, raw
    1 cup, chopped Onions, raw
    2 tsp Rosemary, dried
    1 tsp Marjoram, dried
    4 serving Pacific Natural Foods Organic Low Sodium Chicken Broth, 1 cup
    1 tbsp Extra Virgin Olive Oil
    3 tsp Purity Farms Organic Ghee / Clarified Butter 1 tsp/5g=1serv

Tips

Cut chicken in large cubes, about 2x2" or even larger. Cut celery and carrots on the diagonal and finally, MASH about 3/4 of the potatoes to thicken the stew before serving. Goes great with WASA rye crackers.


Directions

Heat olive oil and ghee together in a large soup pot on medium high heat. Add cubed chicken breast, seasoning with salt and pepper. Stir until outsides are somewhat browned. Add garlic, marjoram, followed by all the vegetables and broth. Bring back to a boil, the reduce and simmer about 40 minutes or until vegetables just cooked through.
