Introduction

Ingredients

    454 grams Chicken Livers
    2 cup, chopped Hard Boiled Egg
    4 1tsp Olive Oil
    1 medium (2-1/2" dia) Onions, raw
    2 tsp Diamond Crystal - Kosher Salt (by SHIRTTALES)

Tips

You can vary the salt as it's main purpose is to pull more liquids from the liver.


Directions

1. Set oven to broil.
2. Rinse livers in sink, then spread out on foil-covered pan.
3. Sprinkle salt and put in oven for 8-10 minutes
4. Chop and sautee onions (optionally garlic if you want) using 1/2 the olive oil
5. Put cooked liver in water to soak until only warm (to get rid of excess salt)
6. Put it all in a blender, press whir.
7. Some folks like a little chunky, some more creamy. Add more oil if you want pate-level smooth (not included in calorie count of recipe)
8. Serve on matzah, Tam-Tam brand crackers, or celery if you're keto/carb limiting.
