Ingredients

3lbs Tyson boneless, skinless chicken breast
14 oz Yellow Sweet Corn, Frozen
1.5 cup Bush's, Black Beans
2 cup Salsa
4.5 cup (8 fl oz) Chicken Broth
2 tsp Old El Paso Taco Seasoning Mix (40% Less Sodium)
3 C Basmati brown rice
Tips
It is super yummy reheated, don't hesitate to eat for lunch.
Directions
Put 1/2C in to pot, then place chicken on top, then sprinkle with seasoning.
Next dump in frozen corn, then rinse and add beans.
next put in salsa
then add in rice
finish off with 3 Cups brown basmati rice
place lid on, and wait 20 minutes, then choose manual and set in to 14.
This will take about 40 minutes total to cook, including pressure reaching time.
You can either let it naturally depressurize, or quick release.
It is yummy topped with a bit of sour cream and cheddar cheese, just count your calories.
