Ingredients

    6 oz Mushrooms, portobello
    1 package (10 oz) Spinach, fresh
    1 clove Garlic
    .25 cup Parmesan Cheese, grated
    2 oz Mozzarella Cheese, part skim milk
    1 cup GOYA Chick Peas (Garbonzo Beans)
    1 dash Salt
    1 dash Pepper, black
    3 tbsp Extra Virgin Olive Oil

Tips

I used garbanzo because it's what I had on hand, you can use any white beans. Squeeze lemon juice over done mushrooms if desired.


Directions

Brush mushrooms with olive oil and season to taste with salt and pepper. Cook at 350F for 15 minutes or until done, flipping once. Lightly mash beans then mix with all other ingredients except mozzarella.
Stuff mushrooms with mixture, top with mozzarella and return to oven until cheese is melted and has a slight golden brown crust.

Serving Size: makes 3-4 medium to large mushrooms
