Number of Servings: 6

Ingredients

    - 15.5 oz. can Princess cut sweet potatoes in light syrup, drained
    - 1 large red bell pepper, cored and corsely chopped
    - 2 large carrots, shredded
    - 5 Tbsp Extra Virgin Olive Oil
    - 1/3 large red onion, cored and sliced
    - 2 large zucchini, sliced
    - 1 package (10 oz) frozen Broccoli, thawed
    - 3 Roma tomatoes, sliced
    - 1/2 cup Kraft 100% Grated Parmesan & Romano Cheese
    - 2 Tbsp Progresso Bread Crumbs - Original
    - 3 drops Basil Vitality essential oil
    - 3 drops Oregano Vitality essential oil
    ***OR 2 Tbsp Progresso Italian Style breadcrumbs instead of the above 3 ingredients***
    - Sea Salt
    - Rainbow Peppercorns

Directions

Heat oven to 400 degrees. Toss yams, bell pepper, and carrots with 2 Tbsp of olive oil in 9 x 13 baking dish then spread evenly across bottom of dish. Grind salt and peppercorns over the mixture. Layer onion over the mixture. Layer zucchini over the onion. Layer broccoli over the zucchini. Drizzle 2 Tbsp of olive oil over the veggies. Layer tomatoes over the broccoli. Grate salt and Peppercorns over the mixture. Blend cheese, breadcrumbs, and essential oils in a small bowl then sprinkle over the veggies. Bake for 40 minutes, uncovered.

Serving Size: Makes 6 meal servings (about 240.8 kcals) or 12 snack servings (about 120.4 kcals)
