Ingredients

2 ¾ cups spelt flour
1/2 tsp. baking soda
1/4 tsp. salt
1 cup sugar
1 tbsp. freshly ground coffee beans
2 tbsp. flaxseed meal
3/4 cup warm freshly-brewed coffee
1/4 cup unsweetened non-dairy milk (I used cashew)
1 tbsp. vanilla
¼ cup cacao nibs
¼ cup miniature chocolate chips
Directions
Preheat oven to 350F and line a baking sheet with parchment paper.
In a large bowl, mix together the sugar, coffee beans, flaxseed, brewed coffee, non-dairy milk, and vanilla.
Stir in the flour, baking soda, and salt to make a dough.
Fold in the cacao nibs and chocolate chips..
Spread the batter into a log on the cookie sheet.
Bake for 35 minutes. Reduce the oven to 325F
Cool for 20 minutes, then cut into 1/2" thick slices and place, cut side down, back onto the baking sheet.
Bake biscotti for 10 minutes, then turn them over and bake the other side for an additional 10 minutes. Cookies should feel firm with a slightly soft center. They will crisp as they cool.
Cool in the oven.
