Introduction

Ingredients

    Dry ingredients:
    1 1/2 cups dry oats (regular or quick), divided
    1/3 cup raisins
    1/8 cup whole wheat flour
    1 1/2 tsp baking powder
    1/2 tsp cinnamon, ground
    1/8 tsp stevia extract powder

    Wet ingredients:
    1 med ripe banana
    1/2 cup applesauce, unsweetened
    1/8 cup water
    1 tbsp maple syrup
    1/2 tsp vanilla extract

    Topping: (optional)
    1 tbsp coconut sugar

Tips

Note 1: I use NOW Better Stevia extract powder. Amount can be increased or decreased depending upon your taste.


Directions

Preheat oven to 375 degrees. Divide the oats and grind half (3/4 cup) into flour using a blender. Add to a mixing bowl with the rest of the dry ingredients.

Add wet ingredients to blender and process until smooth. Add to mixing bowl with dry ingredients and mix until combined. "Dough" will be somewhat wet and you will not be able to form into balls. Drop by spoonful onto to parchment lined cookie sheet (or use a silicone liner). Because there is no fat in these, they will not spread out, but will retain shape while baking.

Sprinkle 1/4 tsp of coconut sugar on top of each cookie and bake for 15-17 minutes. Enjoy warm!
