Ingredients

    1 large Scrambled Egg
    2 cup Spinach, fresh
    2 oz Beef, top sirloin
    1 oz Feta Cheese

Tips

You can sub meat with any other kind of beef or protein like fish, shrimp, chicken, even tofu strips. Likewise you can sub spinach with virtually any other veggie lose in your kitchen of garden. If you hate feta, use any other type of cheese that will crumble well [or cut well into little pieces]


Directions

cut thin and long slices of the beef [left over roasted] if raw cut likewise and lightly fry it on a little olive oil

in separate bowl - mix eggs and feta - season to taste

in 8 in non-stick pan saute beef and add spinach to lightly blanch the greens.

add eggs and feta mix to medium hot pan with saute beef and spinach. lift and rotate pan to achieve even distribution of egg mix.
Once eggs solidified at bottom of pan, transfer it to broiler to finish cooking top of the omelette until firm/slightly brown. Let it rest and serve.

Serving Size: one 6-8 in round tortilla espaņola style
