Ingredients

1 bunch scallions(trimmed and sliced)
2 tbsp sesame oil
8 oz carrots, peeled and diced
1 red bell pepper(diced)
1 green pepper(diced)
1 yellow pepper(diced)
1/2 lb of mushrooms(sliced to preference)
1/2 lb zucchini (trimmed and cut into sticks)
1 tbsp light soy sauce
1 tbsp lemon juice
salt and pepper to taste
6 oz bean sprouts
2 tbsp sesame seeds
Directions
fry scallions quickly in the heated oil for a minute or so. add carrots and bell peppers and continue to fry for 2-3 minutes.
add mushrooms, zucchini and continue to cook for another 2-3 minutes.
combine soy sauce, lemon juice, salt and pepper followed by the bean sprouts.
cook for a further 2-3 minutesand serve with sesame seeds.
makes four servings
