Ingredients

    32 sprout Brussels sprouts, fresh
    1 bulb Fennel
    1 serving Granny smith apple - 1 med. apple
    1 serving Apple, Gala (medium)
    3 tbsp Pine Nuts
    1 lemon yields Lemon Juice
    1 tbsp Lemon Peel
    1 tbsp Orange Peel
    .5 cup Olive Oil
    .5 tsp Salt
    2 tbsp (C) Vinegar, Red Wine (Gr Value)
    1 tsp Dijon Mustard (Great Value)
    2 tbsp Honey

Tips

The photo shows parmesan cheese shaved on the salad, but I did not add it to reduce the sodium and keep it vegan.


Directions

Slice the brussel sprouts and fennel on a mandoline, or very thinly with a sharp knife. Julienne the apples. Toast the pine nuts. Mix the dressing, and toss the apples in it to keep them from browning. (Or just toss with a bit of extra lemon and orange juice.
Toss veggies with salad dressing, and Add pine nuts.
