Introduction

I took my most loved Banana Bread recipe and turned it a bit more Diabetic Friendly by swapping half of the white flour for WW Flour, and using Splenda instead of sugar. Makes 1 very large loaf of 14 slices. Ingredients

    1.5 tsp Salt 1 cup SPLENDAŽ Granular No Cal Sweetener-measures like sugar (by HEALTHYLIVN4ME) 4 tsp Baking Powder 2 medium (7" to 7-7/8" long) Banana, fresh 1 large Egg, fresh, whole, raw 1.33 tbsp Blue Bonnet Light Margarine 1.25 cup Milk, 2%, with added nonfat milk solids, without added vit A 1.5 cup Whole Wheat Flour 1.5 cup Flour - Gold medal all purpose flour

Tips

Rather than saying its "Sugar FREE" , I call it a "No sugar ADDED" recipe. Bananas have sugar naturally. By using splenda i've tried to make the sugar minimal.


Directions

smash bananas with fork to "mush". Then literally just measure the rest of the ingredients and dump into a large bowl. Mix with hand mixer until blended. Pour into an oiled and floured pan. ( I just use Crisco and skip the flour) Bake at 350 degrees for an hour. Cool 10 minutes and remove from pan.
