Introduction

Ingredients

1 cup dried black eyed peas
6 pieces of baon, chopped
4 cup Turnip greens, blanched & frozen
4 chicken thighs, cut into bite-sized pieces
2 cups, diced cooked Turkey (light meat)
1/2 tsp salt
1/2 tsp black pepper
2 tbl diced garlic
1 medium onion, diced
1 tbl fresh thyme leaves
1 tsp ground cayenne pepper
.25 cup Flour, white
3 cup Chicken stock, home-prepared
10 oz Hillshire Farm Turkey polska Kielbasa, cut into thin slices
1 large gren pepper, diced
Tips
If you let this sit for a while on warm the black eyed peas will pretty much fall apart. Cooking time includes the dried peas, you can save 30 minutes by using one can instead.
Directions
sort and rinse the dried peas, cover with 1 inch of water and cook on the bean setting for 10 min, let pressure lower naturally
Drain peas and set aside
Change setting to brown (meat), and cook the bacon until crisp stirring frequently
Remove bacon to a bowl and drain fat to another small bowl
Return 1/2 bacon fat back to pan
Season diced raw chicken with the salt and pepper and brown in the bacon fat
Remove the browned chicken to the bacon bowl
Add the remaining pat to the pan and saute the garlic, onion, thyme, and cayenne until the onion is translucent
Sprinkle with flour and cook briefly (very fast!)
Add 1 cup stock and cook until thickened (fast)
Turn off brown setting
Add remaining ingredients (stock, kielbasa, green pepper, greens, beans, other meats) into the pot and stir to combine ingredients
Assuming that contents are below the max fill line (IMPORTANT)
Pressure cook on high for 10 minutes and let sit until you're ready to eat.
Serving Size: makes 12 one-cup servings
