Ingredients

    1 cup, packed Brown Sugar
    1 cup (8 fl oz) Water, tap hot
    1.5 serving Land O Lakes, Unsalted Butter, ( 1 1/2 T)
    1 cup, packed Raisins
    .5 cup, chopped Cranberries ( 1/2 cup fresh)
    1 tsp Cinnamon, ground
    .5 tsp Cloves, ground ( 1/2 tsp)

    .5 tsp Salt ( 1/2 tsp )
    .5 tsp Baking Soda ( 1/2 tsp )
    1.5 cup Flour - Gold medal all purpose flour ( 1 1/2 cups)

Tips

We cut this bread in thin slices and make sandwiches with cream cheese frosting in the center. This does add calories but the pieces are small and a great treat, especially at Christmas. It’s fun for kids to put the batter in the covered sauce pan out in the snow:)


Directions

Bring all ingredients except flour and soda to a boil in a medium size saucepan. Boil 5 minutes. Remove from heat and let completely cool in fridge ( or in snow ) about 2 hours.
Grease a 9.2 by 5.2 by 2.7 loaf pan and dust with powdered sugar or flour
Heat oven to 350 degrees
When batter is cool, dissolve soda into a small amount of water and add to batter.Stir in flour until well mixed. Spoon into prepared loaf pan ...batter is thick...spread evenly
Bake for approximately 50 -60 minutes on middle rack of oven until toothpick in center comes out clean or with crumbs. Do not overbake! Check bread at 50 minutes and adjust bake time as needed. Cool on rack about 5 minutes and then remove bread from pan. Cool completely before slicing
