Ingredients

    1 tbsp Crisco Pure Vegetable Oil
    3 clove Garlic
    .5 tsp Ginger Root
    15 cherry Red Ripe Tomatoes
    5 serving Green Onion (fresh-1 stalk)
    13.66 oz Thai Kitchen Light Coconut Milk
    2.28 cup Chick Peas
    2.28 cup Great Value Lentils
    2 tbsp Curry powder
    1 tsp Turmeric, ground
    2 tsp Cumin seed
    1 tsp Salt
    .5 tsp Pepper, black
    1 cup Spinach, fresh
    1 tbsp Lime Juice, juice of 1 lime

Tips

Delicious with pittas or any other bread.


Directions

Mince garlic and ginger, chop green onions and drain and rinse the lentils and chickpeas.

Heat oil over high heat. Add ginger and garlic and saut¸¸é.

Add cherry tomatoes and chopped green onions, then coconut milk and (drained, rinsed) chickpeas and lentils. Stir well.

Add spices, salt and pepper and stir.

Add spinach and lime juice and allow to cook for a couple more minutes.

Serving Size: Makes 4, 1-cup servings
