Ingredients

    1/2 cup white sugar (can use splenda)
    1/2 cup brown sugar
    1/2 cup unsweetened applesauce
    2 egg whites or equivalent to 1 egg of Ener-g egg replacer
    1 tsp baking powder
    1 tsp vanilla extract
    1 cup Fiber One cereal
    1/8 cup all purpose flour
    1/8 cup wheat or oat bran
    1/2 cup whole wheat flour
    1/2 cup shredded coconut
    1/2 cup chocolate chips
    1/2 tsp cinnamon

Directions

Preheat oven to 350 degrees F.
Combine dry ingredients in bowl
Combine wet ingredients in separate bowl
Pour wet ingredients into dry and mix well
Drop by teaspoonful onto greased baking sheet
Bake for 13-15 minutes, until golden brown on bottom edges
Makes 26-30 cookies

    Delicious and easy to make. I made them larger than called for and I think that was a mistake. Next time I'll use a teaspoonful to measure the batter out. - 5/9/11

    These are really, really good! The coconut and cinnamon add a nice touch (texture and flavor.) I made them exactly as the recipe states, using Splenda and Gharadelli dark chocolate chips. I was so happy with how they turned out! The best thing is that they are lo-cal and healthy. - 11/16/08
