Ingredients

1 1/2 Cups Adzuki Beans
1/2 Cup Semi-Sweet Chocolate Chips
1/3 Cup Splenda or similar no calorie sweetener
2 Large Eggs
1 tsp Baking Powder
1/8 tsp Salt
2 Tbsp Extra Virgin Olive Oil
1/3 Cup Unsweetened Cocoa Powder
1 tsp Artificial Vanilla Extract
Reserve 1/2 Cup Milk Chocolate Chips (optional)
Cooking Spray (optional)
Tips
I didn’t cook the beans first which resulted in a somewhat dry and crunchy texture. If you prefer it to be more chewy, cook the beans first.
Directions
1. Soak the Adzuki Beans overnight.
2. Drain the Adzuki Beans.
3. Preheat the oven to 350 F.
4. Add all the ingredients into a food processor; process until smooth.
5. Spray a 9 X 9 baking pan with the cooking spray (or line with parchment paper if preferred).
6. Spread the mixture into the prepared baking pan and sprinkle with the reserved chocolate chips, if desired.
7. Bake on the middle rack for 40 minutes (or until a toothpick inserted in the centre comes out clean).
8. Cool the brownies in the pan for 10 minutes to allow them to set before cutting.
