Ingredients

    1.0 cup Pumpkin, canned, without salt
    0.5 cup Yogurt Plain Greek Yogurt, non-fat
    1.0 large Egg, fresh, whole, raw
    0.3 cup Olive Oil
    0.3 cup Honey
    1.5 cup Flour, white
    0.25 tsp Salt
    2.0 tsp baking powder
    1.0 tsp Cinnamon, ground
    1.0 tsp Ginger, ground
    0.5 tsp allspice
    0.5 tsp cloves
    0.5 cup Pumpkin seeds
    3.0 tbsp protein powder, organic pumpkin seed by Omega Nutrition

Directions

Preheat oven to 375°F. Mix together all dry ingredients. In separate bowl, mix together all wet ingredients until well-combined. Add to dry ingredients, stirring until just mixed. Spoon into paper-lined muffin tin. Bake for 20 minutes or until a cake tester inserted in centre comes out clean. Texas muffins will need 25 minutes approx. Cool in muffin tin for five minutes, and five minutes more on a baking rack. Serving Size: 12 regular muffins or 6 Texas-size muffins
