Introduction

Delicious with a little whipped cream on top. Delicious with a little whipped cream on top.

Ingredients

    2 eggs
    1 can pumpkin
    .5 tsp Allspice
    .5 tsp Ginger, ground
    1 tsp Cinnamon, ground
    1 tsp Vanilla extract, imitation, alcohol
    .5 tsp Salt
    2 Tb Stevia
    1.5 Tb Baking Powder
    1.5 cup oat flour
    1.5 cup tapioca flour
    1.5 cup Almond Milk, Vanilla

Directions

Mix together eggs, pumpkin, allspice, ginger, cinnamon, vanilla, salt, stevia and baking powder. Add in oat flour, tapioca flour, and milk 1/2 cup at a time until all is added. Cook on a skillet over medium heat.

Serving Size: makes 16 pancakes
