Introduction
This is one of my Arab husband's favorites. He says it tastes more authentic than what he orders in restaurants. I serve it with Bridget May's Famous Hummus, pita, rice, feta, my tzatziki-like sauce, and green olives if I have them. Delicious and nutritious. This is one of my Arab husband's favorites. Ingredients

1/4 tsp Cinnamon
2 tsp Cumin
2 tsp Paprika
2 tsp Black Pepper
Dash Red Pepper Flakes
1 tsp Salt
2 lb Chicken (Thighs, bone-in is best)
9 clove Garlic
2 Red Onions
1 tomato
8 Jalapeno Peppers
1/3 Cup Extra Virgin Olive Oil
6 TBSP Lemon Juice
1/2 tsp Tumeric
1/2 tsp Sumac (OPTIONAL)
Directions
1). Marinate chicken for 3-12 hours in lemon juice, oil, garlic, and other spices.
2). Heat oven to 425°.
3). Cut onion, peppers, and tomatoes into quarters (4 pieces each).
4). Place chicken on cookie sheet. Toss onions and peppers in remaining marinade and place on cookie sheet. Lastly, toss tomato and place on cookie sheet. Pour any remaining marinade over chicken and veggies.
5). Bake for 30-45 minutes or until onion tips are crispy and chicken is cooked through.
Serving Size: Makes approximately 9, half-cup servings
