Want to enjoy creamy soups without the dairy? Here's my favorite soup made dairy free and lighter calories than with dairy. Add cubed ham if you desire but the soup is great just as is. Ingredients

    4.0 cup (8 fl oz) Chicken Broth
    3.0 stalk, large (11"-12" long) Celery, raw
    0.75 cup kernels Yellow Sweet Corn, Frozen
    1.0 cup, chopped Onions, raw
    2.0 medium (2-1/4" to 3-1/4" dia.) Potato, raw
    16.0 oz Almond Breeze Almond Milk, Unsweetened Original, shelf stable
    2.0 serving Bacon, Applegate Farms Sunday Bacon (2 strips)
    0.25 cup flour, gluten-free

Directions

Dice onion and celery, cube potatoes, and ensure out corn. fry bacon in stock pot over medium high, till crunchy, remove bacon. add onions and celery to bacon drippings and cook 2-3 minutes, stirring frequently, add mince garlic through a garlic press, cook 1 more minute. Add salt, pepper, thyme and paprika. Add flour and cook 2 more minutes stirting frequently. Using a whisk, all at once add the almond milk. Stirring continuously, mixture will start to thicken in 2-3 minutes, slowly add broth, reduce heat to medium low, add in potatoes and corn, cover and let simmer 15-20 minutes, or until potatoes are cooked. Turn heat to low, Add in bacon (&cubed ham if desired). Let sit till meat warms and serve. Serving Size: 1 1/2 cup per serving size=8 servings
