Introduction

Number of Servings: 8

Ingredients

    2 cups TVP
    1 3/4 boiling water
    1 large onion, chopped
    6 cloves garlic, mashed
    2 cups red kidney or pinto beans, undrained
    3 tbsp. chili powder
    1 tablespoon cumin
    2 cups cooked brown rice, (basmati or short grain)

Directions

Rehydrate TVP with 1 3/4 cup boiling water. Saute onion and garlic, with spray oil, until tender. Simmer veggies with TVP, beans (undrained) and spices. Prepare brown rice according to package directions. Mix the cooked rice and beans, taste, add a pinch of cayenne or hot sauce if desired. (green tabasco is the best!)

    I'm very curious what TVP is also... found several recipes that call for it, and when you're only beginning to go vegetarian, all these things are confusing... this sounds great, though, and I really want to try it. - 3/13/09

    Incredible!
    I made this last night and we loved it. Only difference in mine was I sauteed the onions with a little olive oil.
