Ingredients

    37 gram(s) bell pepper, red, sweet, raw
    4 clove Garlic
    0.75 cup Brown Rice, long grain
    0.75 cup Lentils
    2.5 cup Vegetable Broth
    2.5 cup Del Monte Diced Tomatoes, No Salt Added
    1 tbsp Ortega taco seasoning mix
    2 tsp Dried Oregano (by ARCTIC.ORCA)
    1 tsp Salt
    0.5 tsp Pepper, black
    240 gram Cheese - Shredded - Double Cheddar - Light - Cracker Barrel (by KID_1984)

Directions

1 Add all ingredients, except cheese and cilantro, to your Instant Pot. Set to manual and cook on high pressure for 15 minutes. Allow pressure to naturally release for 15 minutes then release remaining pressure.

2. Remove cover and stir in half of the cheese. Sprinkle remaining cheese over the top and replace the cover. Allow to stand for 5 minutes.

3. Sprinkle with cilantro and serve. Enjoy!
