Ingredients

    1 Tbs. olive oil
    4 Chicken Italian sausages (about 4-5 oz each)
    6 garlic cloves, crushed
    2 small fennel bulbs, in bite-size pieces
    12 large green or black olives, pitted and halved
    1/2 cup chicken or veggie broth
    Crushed red pepper to taste
    Salt to taste

Directions

Add olive oil to pan heated over medium heat. Cook sausages in pan until cooked through and browned. Remove sausages to paper towel. Add garlic to pan and saute until soft. Add fennel and olives and saute until they begin to soften. Add chicken broth and cook. Fennel will steam in the broth. Cook until fennel is cooked through and broth has reduced by about half. Season with salt (be careful because the sausage and olives will add salt) and crushed red pepper to taste. Return sausages to pan with fennel to be sure they're still warm. Serves 4.
