Ingredients

4 medium potatoes
6 slices of bacon
2 large eggs
1 tbsp Dijon Mustard
1/2 white vinegar
4 packets SweetLeaf Stevia
1/2 cup chopped onions
dash of cayenne pepper
salt and pepper to taste
Tips
If you add the stevia in too quickly, it will clump. Pour very slowly, whisking madly while doing it. This will result in a lovely, even flavor.
Directions
Peel and dice the potatoes, then boil them until they are soft.
While the potatoes are cooking, cut the bacon into small pieces and cook in a sauce pan. They should be cooked until just beginning to get crispy.
In a medium bowl, whisk together two raw eggs, the mustard, salt and pepper, vinegar, and stevia. Add the stevia very slowly so that it doesn't clump. Finish with the dash of cayenne (or more if you like a bite to it).
Pour the egg mixture into the bacon pan WITH the bacon fat, stirring constantly. It will rapidly thicken and turn into a sauce (you're essentially making hot mayonnaise in the pan, actually!).
Mix the hot, drained potatoes into the sauce, and serve immediately. Top with a dash of paprika or cayenne, or a sprinkle of fresh parsley!
