Ingredients

    1.25 block extra firm tofu
    1 14.5 oz can black beans, drained and rinsed
    1 14.5 oz can pinto beans, drained and rinsed
    1 14.5 oz can navy beans , drained and rinsed
    2 green bell peppers, chopped
    2 tbsp Extra Virgin Olive Oil
    2 tbsp chopped Shallots
    1 14.5 oz can Muir Glen Fire Roasted Diced Tomatoes
    1 jar Muir Glen Organic Garden Vegetable Pasta Sauce
    3 tsp coconut sugar, Madhava™ Organic (1 t)
    1 tbsp Chili powder
    1 tsp Cumin seed
    0.1 tsp Cayenne Pepper (Ground)
    0.25 tsp Garlic powder
    0.5 tsp Onion powder
    1 tsp Salt

Directions

Saute shallots in a deep saucepan or pot in olive oil until translucent. Crumble the tofu into the pot with the shallots and saute the combo until tofu is dry (or desired consistency). Add the remaining ingredients, stir to combine, and simmer over medium low heat, stirring occasionally, for 15 minutes.
