Introduction

Very easy to make & it came out delicious. I usually use walnuts but due to my inability to chew anything hard at the moment, I used the raisins instead. I actually enjoyed them better than the walnuts. I'll definitely use this recipe again. Very easy to make & it came out delicious. Ingredients

    1.75 cup Flour - Gold medal all purpose flour
    3 medium Egg, fresh, whole, raw
    1 tsp Baking Soda
    .5 tsp Cinnamon, ground
    .5 cup Honey
    1 tsp Vanilla Extract
    3 extra small (less than 6" long Banana, fresh)
    0.5 cup Apple Sauce unsweetened, used instead of oil
    2 oz Milk, Blue Diamond Unsweetened ALMOND, 1c, 240ml
    40 gram Fruit, SunMaid Raisins, 1/4c, 40g

Tips

You can sprinkle a little cinnamon on top prior to baking & if you'd like a swirl effect, run a knife zig-zag through it.

Also, you can also sprinkle a little sugar on top prior to baking instead.

Note of interest:
I had frozen my banana's when ripe (just put them in the freezer whole) & defrosted the ones I needed. I had also frozen my eggs when I had too many & then defrosted the ones I needed. To freeze eggs, all you need to do is scramble them plain & put them into snack bags. Personally, I had frozen 3 medium in each bag. To defrost, you can take out the amount you need & let them sit in your refrigerator (I put them on a small paper plate just in case they leaked & please be careful of cross-contamination). I was told you can also put them in warm water for about 30 minutes to defrost.


Directions

1. Preheat oven to 325 degrees & grease a 9.5" loaf pan.

2. In large bowl, whisk the apple sauce & honey together. Add eggs & vanilla, mix well. Add mashed banana's & milk & mix all together.

3. In separate bowl mix flour, baking soda, salt, & cinnamon together.

4. Add the dry ingredients (#3) intermittently into the wet ingredients & mix together just until combined. Some lumps are ok.

5. Pour into greased loaf pan & bake for 50-55 minutes.



Serving Size: Makes 1 loaf, 12 slices
