I lived in Bulgaria for two years. This is what the Bulgarians would call 'comfort food' as it is simple to put together and is eaten often in the home. Ingredients

    12-3 second spray of oil (such as Pam)
    1 tbsp chopped shallots (other onions will do)
    10 cherry tomatoes cut in half (or 1 thick slice)
    1/4 cup chopped peppers -- I use sweet red ones.
    2 oz feta cheese
    1 egg
    1 sprigs fresh dill

Tips

You can probably find oven proof pots or bowls at a thrift shop if you look often enough. I bought terra cotta pots for this purpose when I was in Bulgaria and find I can use them for all sorts of things -- dips and nuts for guests, etc.


Directions

Preheat the oven to 350F. Spray a small terra cotta bowl with the oil and then layer the shallots, tomatoes, peppers. Crumble the feta on top. Break the egg and put onto the top. Bake for 20 minutes. Garnish with the dill.

Serve with bread or crackers or eat with a spoon!
