Introduction

Ingredients

    1 lb Chopped Frozen Spinach
    2 Tbsp Cream Cheese
    2 Tbsp Heavy Whipping Cream
    3 Tbsp Feta- Crumbled
    Salt & Pepper to taste

Tips

You don't need to boil the spinach to cook it, just getting the ice off. It will cook very quickly while tossing with the creamy sauce.


Directions

Boil 1 and 1/2 cups of water. Add 2 tsp salt, add frozen spinach. Cook just until not frozen, 1 minute, drain and press excess water out. In a skillet melt the cream cheese, then add the heavy cream. It will be lumpy at first. Once the sauce is mostly smooth add the drained spinach and toss until coated, add salt and pepper to taste. If it's still runny leave it on medium heat to evaporate some of the juice. Once it's plated top with about 1 Tablespoon of Feta Crumbles.

Serving Size: Makes 3 1-cup servings
