Introduction

Ingredients

    2T unsalted butter
    .25 cup unbleached flour
    2.5 cup (divided) 1% milk
    .25 cup half & half
    1T parsley flakes
    3 cube chicken bouillon
    .25 tsp ground oregano
    .125 tsp dried basil
    .125 tsp ground thyme
    2 oz Romano cheese
    8 oz fresh mushrooms
    16 oz diced ham

Tips

If you don't like mushrooms as much as I do, go with a cup of sliced mushrooms by volume instead of 8 ounces by weight.

Feel free to use 1T chicken bouillon granules if you've got them on hand, instead of 3 cubes (they'll mix in more easily).

If you're worried about fat content, you can use skim milk and fat-free half&half, but of course that will affect the flavor.


Directions

Wash and slice the mushrooms.
Melt butter in a saucepan or skillet over medium low heat.
Stir in flour.
Stir in 2 cup milk, and the half&half.
Stir in the remaining ingredients. Stir until bouillon cubes have melted and are mixed in thoroughly.
Pour mixture into slow cooker.
Cook on low 1-2 hours.

Can be served over baked potatoes and topped with shredded cheese and/or sour cream if desired, but keep calorie count in mind.
