Ingredients

    3 oz. chopped fresh Strawberries (about 2 large)*
    1/2 oz Walnuts (about 2 tbsp) or pecans
    1 large Egg (raw)
    1/4 cup Milk, 2%, (or use milk of choice)
    3 oz. Banana, mashed
    1 tsp Vanilla Extract
    1/2 tsp Cinnamon, ground
    1 oz Oatmeal, quick, dry (about 1/3 cup)

    Nonstick spray for coating baking dish

    *Or use 3 oz. other berries or fruit. Perhaps Apple would be good. If using frozen berries, like a mixed berry blend, bake a little longer.

Directions

Preheat oven to 350. Spray a Pyrex bowl or ramekin with nonstick spray.

Place the 3 oz chopped berries, and the 1/2 oz. of chopped nuts in the prepared ramekin.

In another small bowl, place the egg, mashed banana, milk, vanilla, and cinnamon. Mix well. (II like to use an immersion blender). When blended, stir in the quick oats. Pour over the strawberries and nuts in the ramekin. Stir gently if desired.

Bake at 350 for 40 minutes (maybe 5 minutes longer if using frozen fruit). Let cool slightly before eating.

May be made ahead of time and eaten cold or warmed in the microwave.
