Ingredients

    8 oz Barilla - White Fiber Mini Penne Pasta
    56 grams Green Peppers (bell peppers)
    56 grams Peppers, sweet, red, fresh
    113 grams Celery, raw
    6 serving Bumble Bee Red Salmon, 2.2 oz/63g, about 1/4 cup
    10 tbsp Hellman's Light Mayonaise
    56 grams Onions, raw

Tips

Instead of extra mayonnaise, add 1 or 2 tablespoons of olive or avocado oil to bring back texture. I use Hellman's Canola Mayonnaise to cut calories (40/T vs 90/T).


Directions

Boil pasta to desired texture in lightly salted water. Drain salmon and lightly pick over to remove skin and bones if desired. (bones are edible and high in calcium) Chop celery, onion and peppers. Combine all ingredients breaking up salmon lightly. Season with salt & pepper as desired. May also add a few drops of hot sauce and/or grain mustard if desired to taste. Serve on lettuce leaf with tomato wedges.
