Ingredients

    1 cup Butter, unsalted
    1 cup Skippy Natural Creamy Peanut Butter
    3/4 cup Granulated Sugar
    3/4 cup, packed Brown Sugar
    2 tsp Vanilla Extract
    2 large egg (per the egg board) 50g
    2 1/4 cup Quick Cooking Oats
    1 1/2 cup Flour - all purpose flour
    1 tsp Baking Soda
    omitted 1/2 tsp baking powder & 1 tsp salt for low sodium

Tips

Directions

Cream butters with sugars, eggs & vanilla. Sift remaining dry ingredients and add gradually.
Chill 30 minutes or more. Roll a heaping tablespoon of dough into a ball and press into disks on greased cookie sheet. Bake at 350 for 10 or light brown.

If desired, sandwich 2 cookies with sweetened peanut butter or nut spread. [2 servings]
