Ingredients

    2.35 serving Great Value southwest quinoa
    1.0 cup slices Cucumber (with peel)
    1.0 cup Tomatoes - sm cherry tomatoes
    2.0 serving spring onions-1 medium (15g)
    1.0 wedge yields Lemon Juice
    5.0 tbsp Parsley
    1.0 tbsp Extra Virgin Olive Oil
    1.0 dash Salt
    1.0 dash Pepper, black

Directions

Cook 0.75 cup quinoa, cut the veggies and mix all ingredients when the quinoa cools down to room temperature. Add the dressing before serving.
