Ingredients

2 Zucchini (courgettes)
4 tbsp Olive oil
2 tbsp dried basil or small handful of chopped fresh basil
2-3 cloves of finely chopped garlic
1 tbsp dried oregano or half as much as the basil if fresh
Salt and Pepper to season. Rock or sea salt preferably
Directions
Slice zucchinis length ways and place in an oven proof dish.
Add all other ingredients and mix weel, coating the zucchini.
Put in oven at 150 degrees for 10 - 15 mns (until the zucchini is soft and slightly golden.
Serve hot or cold (both in Italy).
Also you can sprinkle with parmesan after cooking.
