Introduction

Ingredients

    Baked catfish (12 oz.)
    Indian spices (I use 3 TB of shwarma spices and cayenne pepper)
    Salt and pepper
    White wine (2/3 cup)
    Frozen yellow corn (or peas or broccoli) (1/3 c.)
    cous cous (1/3 cup)
    pistachios (15 kernals)
    one scallion


Directions

Each serving is 1/3 cup. We like it for lunch so we have as many as 3-4 servings to a bowl. Eat with carrots or jicama for garnish and serve with ice tea.

Pre-bake the fish and set aside. Heat spices in a non-stick pan. Add fish and coat thoroughly, breaking into small pieces. Add frozen corn (or any vegetable) and wine and bring to a boil. Sprinkle cous cous on top, cover and let stand for 5 minutes. Fluff with a fork and place in bowl. Top with pistachios and chopped scallions or mix in.
