Ingredients

    2 tbsp World Harbors - Jamican Style Jerk Sauce and Marinade
    5 tbsp Orange Juice
    3 medium Scallions
    1 tbsp Extra Virgin Olive Oil
    1 tbsp minced garlic
    16 oz Shrimp, raw, peeled, deveined and patted dry
    3 cups Orange and Yellow Bell pepper strips (1/4 inch wide)
    1/2 tsp Diamond Crystal - Kosher Salt

Directions

Combine jerk sauce and orange juice in bowl and set aside.
Thinly slice scallions, separating green and white sections.
Heat a 14 inch flat-bottom wok (or 12 inch skillet) over high heat until a bead of water evaporates within 1-2 seconds of contact. Then swirl in oil.
Add white sections of scallions and garlic to the pan and stir fry quickly until fragrant (about 10-15 seconds). Push this mixture to the side of the pan and then add the shrimp, spreading them evenly, making one layer int he pan. Cook undisturbed until Shrimp begins to sear. Then using a metal spatula stir-fry for about 30-60 seconds, incorporating the scallion mixture in with the shrimp, until the shrimp are orange but not cooked through.
Add the peppers and sprinkle with salt; stir-fry until just combines. Swirl in jerk sauce mixture and stir-fry 1-2 minutes just until shrimp are cooked through and peppers are tender-crisp. Sprinkle on scallion greens and serve.

Serving Size: Makes 4 servings of 1-1/2 cup each serving
