Ingredients

    8 serving Benita Flour Tortillas - small fajita size
    4 oz Kroger Mild Pork Sausage
    6 large Scrambled Egg
    4 oz Cheese - Kroger Sharp Cheddar Cheese
    8 tbsp Kroger Mild Salsa
    1 tbsp Butter, unsalted
    Some toothpicks and foil.

Tips

You may omit meat for a vegetarian dish, or use hotter salsa for some heat, use a different cheese or add spices to suit your personal taste. I serve mine with sour cream on the side.


Directions

First fry the pork breakfast sausage into crumbles over medium heat on stove top. When browned drain on paper towels to remove excess grease off meat. Place meat into a small bowl and set aside.
Second, crack open six eggs in a bowl or Pyrex measure cup and scramble them up. In same pan you cooked sausage, pour off greases and now add a pat of butter to skillet until melted then add eggs and cook over medium heat until scrambled. Remove the eggs when done cooking to the same bowl as sausage and add the salsa to the bowl followed by the shredded cheddar cheese and place a lid on the bowl and shake it hard to mix, but carefully enough not to spill it out of bowl.
Next, pre-heat oven to 350F and prepare a baking sheet by covering in foil and rubbing it with butter to grease.
Lightly rubber each tortilla with butter on both sides before placing 1/8 of egg/sausage mixture on bottom half and fold over and tuck tortilla from bottom to top to roll up and pin end together with toothpick and place it on baking sheet. When all eight are pinned, place in oven and cook for about 15 minuets to warm through and lightly toast.
