Introduction

I had leftovers from the 4th. The brats had been grilled. I sliced them up and boiled slightly to get some of the fat/salt out of them. It is a little high in carbs too, so keep an eye on your nutrients for the day. Pair with a salad with light dressing or green vegetable of your choice. I had leftovers from the 4th. Ingredients

    6 cloves garlic (or more if you like), sliced
    6 C frozen sweet yellow corn
    1-12 oz package Fusilli (I used a gluten free kind, feel free to use whole wheat)
    2-3 oz bratwurst, cooked, sliced/diced and slightly boiled to reduce fat/sodium
    15 oz can of black beans, drained and rinsed well (or you can cook your own to reduce sodium
    60 sprays of Wishbone italian vinaigrette
    6 pieces Kirkland artichoke hearts, sliced thin
    1-2.25 oz can sliced black olives, drained
    6 Tbsp grated parmesan cheese


Directions

Using a large pot, boil about 5 quarts of water. Add garlic and frozen corn. Three minutes later add fusilli. Boil for 9 more minutes, uncovered, stirring regularly. When pasta is done, add black beans and brats to water for about a minute(this will heat them up). Immediately drain and rinse. Pour this into a large mixing bowl. Spray with spritzer. Then add artichokes and black olives. Mix well. Makes about 6 servings (1.5 C each). Top each serving with approx 1 TBSP parmesan, or omit to save cals/sodium.

You could also replace the brats with chicken breast to lower the sodium and fat. (Cooking time does not account for actually cooking the brats, since these were leftovers.)
