Ingredients

    Half head Fresh Cabbage
    1 medium Carrots

    Sauce

    1/2 cup Meijer Lite Mayonnaise (8 Tbsp)
    4 oz Nonfat Greek Yogurt-Plain
    1/4 tsp Salt
    1/2 tsp Mustard Powder
    4 tbsp Distilled White Vinegar
    1 tsp Celery seed
    1 tbsp Raw Honey (or 3 tsp sugar)

Tips

If you don't want the carrot to 'stain' the slaw orange, grate the carrot on a paper towel. Then wrap the grated carrot up in the paper towel(s) and refrigerate for an hour or so. You won't get all the nutrients from the carrot, but the slaw will be prettier in presentation.


Directions

• Wash, cut and core the cabbage. Slice or grate to your preference.
• Grate the carrot and add to the prepared cabbage.
• Mix the sauce ingredients together until well incorporated. Refrigerate for 20-30 minutes, then taste. If more tart is desired, add vinegar one tablespoon at a time. If more sweet is wanted, add more honey or sugar 1 teaspoon at a time. (My mother likes it with an additional 1/4 cup of sugar! for a more 'Amish' style sweet slaw.)
• Mix the sauce with the prepped carrot and cabbage, cover and refrigerate for at least 3 hours for the flavors to meld with the cabbage.
