Introduction

This is a great salad to make quickly in the summertime. This recipe shows using regular mayo and french dressing, but you could use light or fat free mayo and french dressing as well. Ingredients

    2 cups minute rice
    2/3 cup mayo
    1/3 cup french dressing
    1 t. salt
    1 dash pepper
    1 c. chopped celery
    1/2 c. slivered almonds
    1 1/2 c. cooked chicken breast
    1 c. mandarin oranges

Directions

Cook 2 cups rice according to package directions. It should make a total of approx. 4 cups. Let the rice cool. In a large bowl, mix together the next 4 ingredients. Toss with the celery, almonds, and chicken. Fold rice in with the ingredients. Last, carefully fold in the mandarin oranges. Put in the refridgerator and serve cold.
