Ingredients

4 Salmon filets
1 medium onion, sliced
1/2 pound of sliced mushrooms
1 1/2 cups of Sweet Marsala Wine
1 stick of butter
1 cup flour
Directions
Makes 4 serving size portions
Remove skin from filets and wash with cold water.
Dry the filets with a paper towel.
Heat the butter in a large skillet, then add onion and mushrooms. Cook until tender.
Remove musrooms and onions from pan, leaving juice behind. Put flour coated filets into the pan, skin side down, cook for 5 minutes. After five minutes turn filets over and add 1 cup wine, keeping the remainder for later. Cook the filets for 4 minutes uncovered on medium heat.
Remove the filets and set on warmer. Then add the mushrooms and onions back to the mixture along with the remaining wine. Reduce the mixture until the pan has been deglazed.
Serve over rice or egg noodles.
