Ingredients
-
150 gram Cashew Nuts (raw, unsalted)
2 tbsp Lemon juice
2 tbsp Kal Nutritional Yeast Flakes
2 1tsp Coconut Oil
2 tsp Westbrae Natural White Miso
1 clove Garlic
.25 tsp Salt
Tips
You could experiment with other shapes such as a log.
It may also be possible to mold it in an oiled cup or bowl to avoid using disposable wrap.
Directions
Soak the cashews for 4 hours in the refrigerator.
Drain cashews and place in food processor.
Melt the coconut oil.
Add all the rest of the ingredients and process until smooth.
To form the ball, place a piece of plastic wrap or wax paper over a bowl and spoon the cheeze into it.
Twist the top so it makes a round shape.
Refrigerate at least 2 hours until it firms up (thanks to the coconut oil hardening).
Eat as is, or roll in the coating of your choice - nuts, dried fruit, herbs (not included in recipe calculation).
