Introduction

I made this for on Boy Scout campouts. It became one of the most requested dishes. Parents were astounded that their boys actually ate and liked spinach! Ingredients

    1 Tbl olive oil
    1 clove garlic, finely chopped
    2 Tbl pine nuts
    2 Tbl dried cranberries
    1 10-oz pkg baby spinach, washed
    1 Tbl cider vinegar
    1/2 tsp sugar

Directions

Heat olive oil in wok or dutch oven. Add garlic and pine nuts and stir until browned, about 1 minute. Add cranberries and stir. Add spinach and stir until wilted. Add vinegar and sugar and stir.

Makes four 1/2-cup servings.
