I love pumpkin and curry. They complement each other so well. I make similar dishes to this quite often according to the seasonal veg available. I love pumpkin and curry. They complement each other so well. I make similar dishes to this quite often according to the seasonal veg available.

Ingredients

    250 g pumpkin, cubed
    2 chicken breasts, boned and skinned, cubed
    1 md onion, chopped
    2 md tomatoes, chopped
    2 cloves garlic, minced
    1 c water
    1 tbsp sugar
    2 tbsp vinegar
    2 tbsp cooking oil
    2 tsp salt
    1 tsp curry powder
    1 tsp ground coriander
    1 tsp cayenne pepper

Directions

Prepare all vegetables before hand. Heat oil in a wok or deep pan. Saute onions and garlic. Add chicken pieces and brown. Add a bit of water, tomatoes and all the seasonings, including the sugar and vinegar. Stir a couple minutes. Then add the pumpkin and cook for 5 minutes. Add the eggplant and the remaining water. Simmer on medium heat about 15 minutes or until vegetables are tender. Serve over basmati rice or with chapatti.
