Ingredients

    16 oz Ground beef, lean
    1.5 cup, shredded Cheddar Cheese
    .5 cup, chopped Onions, raw
    6 Mission Carb Balance Soft Taco-size Tortillas
    1 cup Beans - refried, Fat Free
    1 clove Garlic chopped or grated
    1 can Enchilada Sauce

Tips

I serve with , lettuce, tomatoes, sour cream and guacamole for garnish. The garnishes are not included in the nutrition count


Directions

Heat oven to 350F, spray a 9 x 13" pan with cooking spray. Brown ground beef onions and garlic, drain and put back in the pan. Mix in 1/2 can of enchilada sauce. Pour 1/2 of remaining sauce in 9 x 13 dish. Place 2 tortillas on top of the sauce, they will over lap. Spread refried beans in an even layer, sprinkle with 1/2 cup of cheese. Place 2 more tortillas on top and top with meat mixture spread in an even layer. Top with 1/2 cup of cheese. Top with remaining tortillas, spread remaining enchilada sauce on top and top with the remaining cheese. Bake @ 350F for 30 minutes or until cheese is melted and browning around the edges.
