Introduction

These are delicious and fairly nutritious, also great with nuts added. Good for a snack, dessert, or breakfast. This is not an original recipe, but it's so wonderful I wanted to share it. So thanks to the "Food For Fifty" recipe book for this one.

You might want to scale this one down, these are the measurements for 120 muffins to be fed to a large group. So unless you have a serious crowd, I'd take it down quite a bit!

Number of Servings: 120

Ingredients

    6.25 Cups Granulated Sugar
    3.25 Cups Vegetable Shortening
    14 Eggs
    2 Tbsp Vanilla Extract
    10.75 Cups Mashed Ripe Bananas
    2.5 Cups Whole Wheat Flour
    6 Cups All Purpose Flour
    7 Tsp Baking Soda
    3 Tsp Salt

Directions

Cream sugar and shortening together in a mixer on medium speed until fluffy. Add in eggs and vanilla and blend on low until well combined. Add mashed bananas and mix on medium speed for 10 minutes.

Combine dry ingredients, then add to the mixer bowl. Mix until combined. (Add nuts if desired)

Portion into muffin tins using a 2 ounce ice cream scoop, or fill until about two thirds of the way full.

Bake at 325 for 12 to 18 minutes.

Makes 10 dozen (120) muffins.
